It looks like I'm back on track posting the menus I've planned for the week ahead on Sunday. Here's some of what will keep me busy in the kitchen this week:

Pan-Seared Lamb Loin Chops, Couscous w/ Garlic & Walnuts & Oven-Roasted Asparagus
Beer-Simmered Bratwurst, Ramen Noodle Coleslaw & Tater Tots
Veal Parmesan, Pasta Tossed w/ Olive Oil & Garlic & Mixed Greens Salad
Almond-Crusted Tilapia, Rice Pilaf & Broccoli Sauted w/ Olive Oil, Garlic & Lemon
Sausage, Egg & Cheese English Muffin Sandwiches, Hash Browns & Strawberries w/ Whipped Cream

We had the lamb chops last night...Fabulous if I do say so my damn self!
They are more of a splurge than I usually do on a run-of-the-mill Wednesday, but they were on sale! I cannot resist half price lamb loin chops!
I was a little concerned about getting a couple of them cooked through because I swear they were 2 1/2 inches thick. But I did it and they all came out perfectly pink and lovely inside!
We are big fans of lamb! Hmmm, haven't had leg of lamb in a while... I'll have to check that out when I'm grocery shopping this weekend!
