What's Cookin'? 11/2/08

November already? Well, at least Halloween is over and soon the election will be too! What will occupy our minds after Tuesday...? As for me, I've got that NaBloPoMo thing to do and there's always dinner! As usual I have pre-planned my NaBloPoMo theme and of course our meals for the week ahead. Here's what's cookin'...

Bacon, Egg & Cheese Breakfast Enchiladas

Beef Patty Melts on Sesame Semolina Bread w/ Cheddar-Horseradish Sauce, Cross Cut French Fries & Assorted Vegetable Platter w/ Ranch Dip

Lamb Loin Chops, Walnut Couscous & Spinach w/ Olive Oil & Garlic

Chicken Kiev, Steamed White Rice & Broccoli w/ Olive Oil & Garlic

Deluxe Beef Nachos & Mixed Greens Salad

Cracker-Crumb Crusted Chicken Strips, Garlic Mashed Potatoes & Creamy Coleslaw

Is this the part where I say "gentle people, start your engines" and wave the checkered flag? I thought about participating, but am leaving for 5 days this week to visit 3 blogging friends if you can believe it! I'll be near Cleveland until next Monday for a wedding and some great cooking. You'll laugh, but to prepare for my absence, the closest I got to writing a menu, was throwing a few things in the grocery basket and telling my husband what his selections were for each night. Two kinds of pasta w/ two kinds of sauce, two kinds of soup w/ two kinds of salad. Eat the soup & salad first so the greens don't go bad on you. Get take out one night. Sad, huh?
